Here you can see the most outstanding dishes, which have already crossed our borders and can be found in many cities in Spain. On a visit to Córdoba, they should not be missing from your table. ### Salmorejo Thick tomato cream, prepared with bread, oil, and a little garlic. Once made, it is served with chopped hard-boiled egg and Serrano ham. Once made, it is served with a garnish of finely chopped vegetables. Sometimes, it is served in a glass to drink. Some restaurants offer different versions of this traditional dish. It is whitish in color. This is a very old dish, medieval, from before tomatoes arrived in our cuisine following the discovery of America. It is a dish suitable for vegan and vegetarian diets.
