Cordoban Gastronomy

Cordoban popular gastronomy is based on the Mediterranean diet, especially on vegetables, salads, and local products. Here you can see the most outstanding dishes, which have already crossed our borders and can be found in many cities in Spain. On a visit to Córdoba, they should not be missing from your table.

Salmorejo

Thick tomato cream, prepared with bread, oil, and a little garlic. Once made, it is served with chopped hard-boiled egg and Serrano ham. It can be ordered without egg or ham for vegetarian or vegan diets.

Gazpacho

Cold tomato soup, prepared with oil and a little garlic. Once made, it is served with a garnish of finely chopped vegetables. Sometimes, it is served in a glass to drink. Very typical in summer.

Flamenquín

🧒 Rolled fillet (usually pork loin), filled with ham, breaded and fried, typically served with mayonnaise and salad or fries. Some restaurants offer different versions of this traditional dish. At Bar Bonillo, not far from our place, they offer a giant version of it!.

Mazamorra

Thick cream, similar to salmorejo, in which almonds replace the tomatoes. It is whitish in color. This is a very old dish, medieval, from before tomatoes arrived in our cuisine following the discovery of America. It is a dish suitable for vegan and vegetarian diets. High quality proteins.

Ox tail

Stew made from oxtail, cooked for a long time, juicy and with an intense flavor. Prepared with saffron, vegetables, and other spices.

Fried eggplant (with sugarcane honey)

This vegetable is served fried in slices or sticks, usually accompanied by cane honey. Suitable for vegetarian or vegan diets.

Spinach with chickpeas

A very traditional dish, vegetarian-vegan, but a great source of protein due to the proportion of legumes in the dish. It consists of cooked chickpeas, sautéed with spinach, and seasoned with bread, garlic, paprika, cumin, and other spices.
